«Paleta» is a piece obtained from the forelimbs of the 100% Iberian pork, produced in Andalusia and Extremadura’s farmlands.
This pork is processed in the sausage and salting ham factories, in the Natural Park of the Aracena Mountain Range and the Aroche Peaks (Production area D.O.P. Jabugo).
The appellation of origin of Iberian ham (PDO – Protected Designation of Origin) guarantees the highest quality of the product. It ensures the Iberian breed of pig, the food received during the fattening period (pastures and acorns) in any of the pasture areas contemplated in the regulation, and the production method, following unique traditional processes.
Maturing: Minimum of 18 months period, frequently for 24 to 36 months, according to the weight of the piece.
