HAM from HUELVA

Description of the Product

These hams and shoulder blades come from pigs which are either pure Iberico breed, or mixed with Duroc-Jersey with at least 75% of Iberico blood.

Considering what the pig has been fed before being slaughtered, the pork from these pigs can be classified as follows:

- Cerdo de bellota o terminado en montanera (Acorn pork or pig finished on pasturelands): This pork comes from pigs which had a weight between 80 & 115 Kg when moved to pasturelands. They had to gain 50% of their initial weight on this diet to belong to this class.
- Cerdo de recebo o terminado en recebo (Gravel pork or pig finished with gravel): This pork comes from pigs that gained at least 30% of their initial weight, with acorn and grass on the pasturelands, (their average weight when entering the pasturelands was between 85 and 115 kg). They can be fed to completion with authorized dry foods.
- Cerdo de pienso o terminado en pienso (Fodder pork or pig finished with fodder): This pork comes from pigs which were fed, on their final stage (after an average weight of 85 to 115kg), with an extensive diet of authorized dry foods and fodder.

Geographic area

The production area for these pigs consists of large meadows with holm oaks, cork trees and gall oaks, located in the provinces of Sevilla, Córdoba, Huelva, Cádiz and Málaga, as well as in the provinces of Cáceres and Badajoz, which belong to the farming regions listed in the 4th article of the Reglamento.
The making area is integrated by thirty one municipalities within the province of Huelva, all of them located in the region of La Sierra.
