Products´ descriptionThese hams and shoulder blades come from thoroughbred Iberico pigs or crossbred with a 75% of Iberico blood and 25% of Durocjersey breed.The pork from these pigs is classified according to their diet as: a) Cerdo de bellota o terminado en montanera (Acorn pork or pigs finished on pasturelands): The one that having an entrance weight between 80 and 105 kg gains at least 60%, or 65% of its entrance weight on this diet, depending on whether it is purebred Iberico or crossbred with 75% of Iberico, respectively. b) Cerdo de recebo (Gravel pork): This pig had to gain at least 30% of its entrance weight on pastureland diet, being helped on its feed with authorized dry foods. c) Cerdo de pienso o terminado en pienso (Fodder pork or pigs finished with fodder): The one which diet is carried out with authorized dry foods.
The production area consists of large meadows wooded with holm oaks and/or cork trees, located in the provinces of Cáceres and Badajoz. The making and maturing area is integrated by 40 municipalities in Badajoz and 45 in Cáceres, mainly located on the Extremadura mountain ranges, in the southwest of Badajoz, Ibor-Villuercas, Cáceres-Gredos Sur, Sierra Montanchez and Sierra de San Pedro. |
